What is the best way to store whey?
I am going to start making my own mozzarella cheese. I know the whey bi product is great for making bread etc.. I am uncertain about storage of it.

This is going to be interesting. Good Luck. I'm glad to see you trying to use it rather than just discarding it. That's what they did many years ago in cheese plants everywhere until they realized how valuable it is. The liquid whey itself can be refrigerated if you are going to use it in a few days. Otherwise it will get moldy. If you need to keep it for longer you could freeze it depending on the volume of whey you have and the room you have in the freezer.
Commercially they dry the whey in spray dryer and it will be stable for about a year. But I don't know how you could easily dry your whey. Good Luck.
