Deep fried Cornish Hen?

Have you tried this

Cut the back bone from 1 Game hen to butterfly it

Season well salt pepper tyme your favorites

Dredge in flower then egg was then flower

Deep fry start oil around 360degrees as temp will drop

continue frying around 350 degrees until golden brown

remove from fat and drain

will you try this?

Update:

You could break the hen all the way down if you prefer

    Sort like frying a turkey?...or smoked with duck sauce glaze.

    i tried to batter fry ,but it never cooked enough before the batter burned ,

    ive found that a good long marinade is best for frying ,although i did boil it first to get the second try a head start and this turned out a better battered chick !

    i think its just the game hen is more dense than a regular chicken and the cooking time is more to reach doneness.

    this may work in sightly lower heat ,i'll keep trying...
