Looking for some quick to fix and healthy recipes (read all the question)?

OK, so I'm a very picky eater. I work full time as well as being a full time student. I'm looking for some quick to fix recipes that I can prepare for me and my boyfriend. Please stay away from SEAFOOD< BROCCOLI and SPINACH or offer alternatives. I'm looking for meals that take less than 45 minutes from prep to finish. ANy helpful links would be appreciated as well.

    Garden Pasta Salad

    1 (16 ounce) package uncooked tri-color spiral pasta

    1/2 cup thinly sliced carrots

    2 stalks celery, chopped

    1/2 cup chopped green bell pepper

    1/2 cup cucumbers, peeled and thinly sliced

    2 large tomatoes, diced

    1/4 cup chopped onion

    2 (16 ounce) bottles Italian-style salad dressing

    1/2 cup grated Parmesan cheese

    Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.

    Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.

    Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well.

    Chill for 1/2 hour before serving.

    Stir Fry Glazed Chicken

    1/3 cup sweetened condensed milk

    1/3 cup mayonnaise

    1 teaspoon white sugar

    2 teaspoons white vinegar

    2 teaspoons honey

    2 pounds skinless, boneless chicken breast halves - diced

    6 eggs, beaten

    1 cup all-purpose flour

    1/3 cup canola oil

    In a small bowl, whisk together the condensed milk, mayonnaise, sugar, vinegar, and honey until combined into a sauce; set aside.

    Combine the diced chicken and beaten eggs in a bowl and set aside. Spread the flour in a shallow dish. Dredge the chicken pieces in the flour until evenly coated.

    Heat the canola oil in a skillet over medium-high heat. Cook the chicken in the heated oil for about 2 minutes, turning occasionally to brown evenly. Stir in the sauce until the chicken is completely coated. Cook and stir until chicken is golden brown on the outside and no longer pink inside, 12 to 15 minutes.

    Rice and Chicken Casserole

    1 cup uncooked white rice

    1 (10.75 ounce) can condensed cream of mushroom soup

    1 (1 ounce) package dry onion soup mix

    1 1/2 (10.75 ounce) cans milk

    1 (4 pound) chicken, cut into pieces

    Preheat oven to 250 degrees F (120 degrees C).

    Combine the rice, mushroom soup, dry onion soup mix and milk. Mix together. Place rice mixture in a 9x13 inch baking dish. Place chicken pieces on top of rice mixture and bake, uncovered, in the preheated oven for 3 hours or until rice is tender (turn chicken once).

    Blackened Fish - We use catfish but it works with others. Make your own blackening blend (much cheaper) or buy some at the store. Sprinkle the fish with the spices and cook in heated pan coated with non-stick spray.

    Chicken Caesar Salad - Very quick if you buy the caesar salad mix in the bag and precooked chicken at the store. Great in the summer with fresh fruit and garlic bread made by adding minced garlic and parsley to softened butter.

    Veggie Pasta - Use veggies on hand but I like it with julienned carrots, snap peas, sun-dried tomatoes, garlic and onion. Saute veggies in a little olive oil and chicken stock (maybe 1/4 cup as you don't want too much liquid). Toss with cooked wheat pasta and add some capers and freshly grated parmesan cheese.

    Assorted cheeses and breads with fresh fruit.

    Salsa Chicken - Cut up chicken breast into 1 inch pieces. Saute with garlic, onion and peppers (I've used bell, jalapeno or poblano). Add small can Herdez salsa and let the flavors simmer for 20 minutes. Serve over rice.

    Quesdillas have limitless possibilities and are really fast.

    When you are cooking, make enough for 2 nights and freeze half. On busy days you just defrost, heat and eat.

    We have picky eaters around my house as well. I like using my crock pot for tight times too.

    I recently made chicken with diced tomatoes in the crock pot, boiled some noodles on the side.

    beef tips and gravy work well in the crock pot too.

    Taco bake is famous around here. Take ground beef (90%) fry it up, add taco seasoning after draining, if any grease is there. Spread in a 9 x13 pan, add salsa(usually homemade), corn, low fat cheese. Then we added biscuits on top and baked. (our biscuits are the rolled in a tube) After cooking, we added lettuce and what veggies we like on tacos.

    I find what works best with our household is I start with a meat, not a recipe. Then I just add the stuff I like and in the end, there may not be a name for it, but everyone eats every bite on their plate.
