Does anyone have an amazing Chili recipe you would share?

We're having a chili cook off and I'm not sure my own recipe is up to the challenge. Do you have a winning recipe or tips for making amazing chili? What are your secrets?

    I'm an award winning chili champion, but this a long drawn out answer. I'll tell you briefly to use a good cut of beef like new york strip or tenderloin,cut thin not to chunky. canned tomatoes, masa, fresh chilis, like jalepenos, I use pickeled jalenpenos. good chili powder, cumin, oregano, garlic,black pepper, sugar, cocoa powder or chocolate,cinnamon, not too much, beer, tequila, not tooo much and oinion which I almost forgot. p.s. alittle salt. good luck

    Everyone loves my "Kitchen Sink" chili! I call it that, because my husband looked at what I put into it, and asked if I was going to put the kitchen sink in it too!! hehe! :)

    Kitchen Sink Chili

    1 lb. ground turkey

    1 lb. mild italian sausage

    2 large carrots, diced (1 cup) or 1 can julienned carrots if you can find it!

    3 celery ribs, diced (3/4 cup)

    1 medium-size sweet onion, diced

    1 green and 1 red bell pepper, diced

    1 large zucchini, chopped (1 1/2 cups)

    1 yellow squash, chopped (1 cup)

    1 packet chili seasoning

    2 jalapeno peppers, seeded and diced

    4 (15-oz.) cans (1 of each) chili seasoned pinto, black, great

    Northern & kidney beans, drained

    1 can Fiesta corn

    1 (16-oz.) can chili seasoned tomato sauce

    1 sm. jug V8 juice

    2 (14 1/2-oz.) cans Rotel diced tomatoes ( I use 1 hot, 1 mild)

    1 can whole tomatoes, cut in quarters

    I brown the meats, and saute the raw veggies, just for a few minutes. While that's going on, I pour the V8, tomatoes, tomato sauce, RoTel, tomatoes, seasonings, and beans into the crockpot. Then, add the sauteed veggies and meats. I like to stir every hour, and cook for a total of 8 hours on low heat.

    I add beer instead of water. It tastes richer. Use good beer, cheap stuff tastes bitter. Also, ground venison instead of ground beef gives it great flavor and isn't as greasy.
