i need recipes on how to make good irish rum cake, got any?
i love me some celtic food, but for my birthday i want a rum cake like they have at scottish festivals, but i cant find any one who makes them. so i need a recipe. got any good ones?

IrishCream cake recipe:
Ingredients
1 pkg. yellow cake mix
4 eggs
1/2 cup oil
1/2 cup chopped pecans
1 (3.4 ounce) instant vanilla pudding mix
1/4 cup water
3/4 cup irish cream liqueur
1/2 cup shredded coconut
Glaze ingredients:
1/2 cup butter
1 cup white sugar
1/4 cup water
1/4 cup Irish Cream Liqueur
Directions
Preheat oven to 325*
Grease and flour 10-inch bundt pan.
Sprinkle nuts and coconut evenly over bottom of pan.
Combine cake mix and pudding mix.
Mix eggs, oil, water, and Irish Cream
Beat for 5 minutes at high speed.
Pour over nuts in pan.
Bake for 1 hour.
Cool for 10 minutes while you make the glaze.
Combine butter, water and sugar in a small saucepan.
Bring to a boil and continue boiling for 5 minutes, stirring constantly with a whisk.
Remove from heat and whisk in 1/4 cup Irish Cream.
Invert cake onto serving plate.
Prick top and sides of cake.
Spoon glaze over the top and brush sides of cake, until the glaze is absorbed.

This may not be exactly what you were after, but it is a pretty good cake.

Rum Cake
* 1 cup butter
* 2 cups sugar
* 4 eggs
* 1 cup buttermilk or sour milk
* 2 tsps. rum extract
* 3 cups flour
* 1 tsp. baking powder
* 1 tsp. salt
* 1/4 tsp. baking soda
* Butter Sauce:
* 1 cup confectionery sugar
* 1/2 cup butter
* 1/2 cup rum
* 1 tsp. rum extract
Directions
1. Cream butter with mixer then gradually add sugar and mix well.
2. Blend in eggs one at a time.
3. Combine buttermilk and rum extract.
4. Sift dry ingredients together.
5. Add dry ingredients and buttermilk to butter mixture alternately, beginning and ending with dry ingredients.
6. Grease and flour Bundt pan and cook at 350°F for 60-65 minutes. When done, insert a narrow spatula or knife around edges of pan to loosen.
7. Poke long toothpicks into cake all over top.
8. Heat ingredients to butter sauce until all blended. (add rum after heating to retain more alcohol)
9. Slowly drizzle hot butter sauce over cake allowing time for it to be absorbed.
10. Cool completely in pan before removing.
11. Sprinkle with confectionery sugar.
