most cuts w/ the name "loin" or "round" in them are tough cuts requiring moist heat cooking methods to make them tender enought o eat. Braising, stewing, or boiling are some methods to consider.

Try making beef stroganoff out of it. Shoudl become nice and tender that way.

The length of time to fry a steak depends on the thickness and the temperature of a pan. As a rule of thumb, flip it over as soon as you see liquid starting to puddle on top, and it will come out medium rare.

To make a really perfect steak, it should be warm all the way through before you put it in the pan. Chefs use the "sous vide" method where they put vacuum-packed steaks in a cooker that's maintained very carefully around 140 degrees. You can do something similar by warming your steak in the oven. After warming, the steak only needs to go in the pan long enough to brown it on each side - just a few seconds.

At the very least, allow it to sit at room temperature for about an hour before cooking. Add salt and pepper first to draw out the flavor.

Also, remember to pat the steak dry with paper towels before grilling or frying or it will not brown properly.

This is to die for. Add salt and pepper to each side of the steak. On a stove top, heat your pan to medium high. Add 1 tablespoon of butter and fry the sirloin for about 4 minutes per side. Remove the steak and as it rests, reduce the heat to low. Add 2 tablespoons butter and add 1-2 diced shallots to the pan. Cook for about 2 minutes and add in a decent DRY red wine like a Cabernet or red Zinfandel. Turn the heat off but mix all of the good stuff in the pan.

Meanwhile, slice the sirloin steak in thin slices AGAINST the grain. Serve with the sauce on the side. I make this for company all of the time and they just love it. The key really to sirloin is to not leave it as a full steak, slice it against the grain but only after it rests for about 7-10 minutes so all of the juice does not pour out of it.

    Hope you enjoy!

You fried. You should broil or grill. I grilled sirloin last night and it was great.
