Cooking pork shoulder, how long?

I'm making pulled pork. I have about an 8 pound bone in pork shoulder.

I'm cooking it at 250 degrees in the oven. In 8 hours will it be tender or tough?

Update:

250 is plenty hot to kill any and all bacteria found in pork, I'm not worried about bacteria, trichinella dies at 137 degrees and modern sources say pork can be cooked to 140 degrees internal temperature without a risk.

I want to know if it will get tender at that length of time.

    I think your 8 hours is just about on target. Cook it in an acid based liquid, like barbeque sauce and that will help to break down the tough fibers even more.

    It should be good. Pen obviously is thinking roast pork not pulled pork like BBQ. In my smoker I would cook it about the same as you are. About 250 deg. 8-10 hrs. I would use a dry rub before smoking.

    Raise the temp to 300. Use a meat thermometer and take the pork out when the internal temp is 170. Then wrap in foil and let it sit 30-45 minutes before pulling.

    250 is way too low. You want to cook pork at 325. Use a meat thermometer or just fork it till it is tender. 20 minutes a pound is usually a good guide.
