I got this recipe here last year when I asked for sides using traditional ingredients done a little differently. It was really, really good, and plated extremely well on a rectangular dish that is about 5 inches by 15 or so. I was just talking to my sister about it and how we are going to make it again. This year we are going to try Applewood smoked bacon.
Bacon-Wrapped Green Beans
Ingredients:
* 3/4 pound fresh green beans
* 4 bacon strips
* 3 tablespoons butter, melted
* 1/4 cup packed brown sugar
* 1/4 teaspoon garlic salt
* 1/8 teaspoon soy sauce
Directions:
Place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8 minutes or until crisp-tender. Meanwhile, in a skillet, cook bacon over medium heat until cooked but not crisp, about 3 minutes. Remove to paper towels.
Drain beans; place about 12 beans on each bacon strip. Wrap bacon around beans and secure with a toothpick. Place on an ungreased baking sheet.
In a small bowl, combine the butter, brown sugar, garlic salt and soy sauce; brush over bundles. Bake at 400° for 10-15 minutes or until bacon is crisp. Yield: 4 servings.

Hi Hunni, A Traditional sauce is holandaise. If you google you will find a recipe it is long to write or explain but very easy to make. or another is a basic white sauce made with half milk and half chicken or vegetable stock,called a veloute or velvet sauce. Or if you fry breadcrumbs in a very little oil in which you add a couple of cloves of garlic to flavour the oil -after which you throw the garlic away - this will give the beans a different texture and flavour. i hope this helps. all the best. My cousin blanches her green beans & then adds them to a frying pan that contains cooked bacon and chopped onion & garlic that has been sauteed until it is pale gold & translucent. She then adds double cream, heats it gently & then adds freshly ground black pepper & serves.
As they are fresh though, for a big change, why not just cook them & serve steaming hot with a knob of butter on the top?

Fry chopped onion and beans in butter and a drop of oil till onions are transparent and beans are slightly tender but still crispy coat with some tomato paste salt and pepper voila.

Put a little sesame oil in a pan and heat it up with sesame seeds and a little soy sauce and throw the green beans in there and saute just a little. Better if you have slivered almonds too, maybe even thinly sliced mushrooms. Yummy!

Usually I cook them with fresh minced garlic, onions, bacon or ham, mushrooms, beef or veggie stock, and salt and pepper. Sliced almonds are good on top too. Sometimes I also toss some (after they're boiled) with olive oil and red wine vinegar and red onion. That's also good with some cubed, boiled red potatoes tossed in.

I like doing them in a saute pan with olive oil or butter (depending on what taste you like), fresh garlic (very different flavor than garlic powder which is bitter) and salt.
I also like doing them with lemon and butter and a little dill. Keeps them fresh.

get walnuts, chopped. toast them lightly in oven or whatever.
blanch the green beans till tender to eat. put them in cold water right away to stop cooking then.
put butter in pan, brown it till nutty smell arrives....
throw in green beans and chopped walnuts.
add salt, pepper. eat.
also green onions in it are best, not regular onions
