potatoes with roast in crock pot?

I have a sirloin roast in a crock pot with onions and potatoes. I have the onions cooking on a thin bed of olive oil, then the roast (there are 2 small 1.5lb roasts) I have a can of beef broth and a cup of water w/ bullion cube over the roast.

My question is about the red potatoes - I want to cook them with the roast, but I really only have room on top of the roast the the moment, but most are not submersed in liquid. is this ok? will they just steam cook fine? Or should I move the roast on top of the potatoes and add more liquid?

    I have had problems with cooking them not submersed in liquid. Sometimes they do, sometimes they don't. my suggestion is to either add a little more water, or move the potatoes every hour to make sure they're getting cooked. you want to move the ones in the middle toward the edges, and vice versa. the ones touching the hot sides will cook faster, so moving them around should ensure even cooking. lifting the lid every hour or 90 minutes doesn't release that much heat.

    they will cook just fine, particularly if you stop opening the crock pot to play with the food.

    Every time you do, you release the heat and it will end up taking longer to cook.

    I never add any liquid to the crock pot as it makes its own more intense flavored liquid.

    If everything is submersed you are boiling it.....

    EDIT: I read with interest the one gals problems getting potatoes to cook at all if not submerged.

    My lastest crock pots instructions said that veggies, like carrots and potatoes, took longer to cook in a crock pot situation and said to put the veggie in the bottom with the meat on top. I always do that and have never had problems getting the potatoes and carrots to cook. They are tender and ready to eat when the meat is.
