If a recipe calls for a whole chicken and I want to use boneless breasts and thighs, how many do I use?

I don't have time to boil the chicken and de-bone, so I am substituting boneless. Any thoughts?

Update:

So if a whole chicken weighs 4 pounds, you are suggesting I use 2 pounds of meat? Is that correct?

    If it were me, I wouldn't try to get too scientific about it. I'd just go with three boneless half breasts and four boneless thighs. That may come out to a little more meat than you would probably get off the whole chicken (unless you're a champion deboner), but I would expect it to be close enough, so I'd just take my chances. :o)

    It depends how many people you want to feed ( what size whole chicken would you have used to make the recipe?).

    To replace the meat in a medium size chicken, you could use 2 good sized breasts and maybe 4 boneless thighs I reckon- but without knowing the recipe and what else it contains it's hard to say. If the recipe makes use of the stock flavouring you would get from using a whole chicken, maybe also use a good quality chicken stock cube or jelly as well.

    i would say six to eight pieces however your cooking them. The other day I put my chicken pieces in a zipock bag with italian dressing and then baked them for 40 minutes at 350 degrees make a nice toss salad and bake potato, theres a nice balanced meal

    I would use either 4 breast halves and 2 thighs or 3 breast halves and 4 thighs.

    Simply make it easy by weighing -up the packages before and after you de-bone them. Enjoy!

    Use about half. Remember there is a lot of a whole chicken that you do not use, such as backs.
