Is sourdough bread supposed to be hard/staleish?

Crusty on the outside, but still moist on the inside.

If it's too stale, just slice it and bake it off for croutons, or blitz it in a food processor and make your own bread crumbs.

Fresh sourdough bread should have a thick "skin" but still be very pliable. It should not be crusty and make you fear that you are going to break your dentalwork with each bite. Unfortunately most sourdough bread that you buy from anything but a good bakery will usually end up getting crusty very quickly.

If you are ever in San Francisco, go to the Boudin Sourdough Bakery on Fisherman's Wharf. The bread there is fantastic -- the best sourdough I have ever eaten.
