the classic Spaghetti and meat balls is always nice and it is simple and easy. You could spice it up with some home made garlic bread.
which could also be simple by using already sliced bread from the store, melting some butter and adding a bit of garlic powder to it, glazing the bread with the mix and letting it toast in the oven.

Cook something you know how to cook and are comfortable cooking! Make sure its something that doesn't require her to clean up a ton of dishes, her stove, or her sink when you are done cooking :)

If think you should make some type of chicken like a fancy one, not just a store bought one. If she is variegation, make her a nice salad.
