    Make them the night before so they have time to set.

    If they are for a cooked breakfast I would cook even more potatoes for fried potatoes to go with the potato cakes. Eggs would be good to go with them also

    A favorite at my home served with cheese grits and biscuits. We also enjoy them with vegetable quiche or frittata. Delicious !!

    I like them with grilled tomatoes, scrambled eggs, or home fried potatoes.

    Oh ya! cantaloupe slices, and strawberries also.
