If you are comparing to a fresh fig - it's the same with any fruit fresh vs dry or cooked. Tastes different. If you are comparing it to a dry fig, it should actually be pretty similar, just not as sweet since it doesn't have added sugar.

A fig needs to be dehydrated for it to get the fig newton taste.
