Cheap-ish, healthy-ish, plated dinner ideas?

Please refrain from using: frozen food, premade spice mixes (chili mix, taco seasoning, etc.), hot dogs/ pizzas/ sloppy joes/ egg sandwiches/ enchiladas/soups/ casseroles, any slow cooker/crock pot meals (I'll just use an oven), anything deep fried (Pan fry and sauteeing is fine), anything with a lot of butter/fat/oil.

I would like to make actual plated meals, consisting of: 1 protein (Preferably chicken, then beef, seafood, pork), 1 or 2 vegetable sides, 1 starch (preferably whole grain, potato, or legume, use of bread only if necessary), and an accompanying sauce is optional. The vegetable sides can range from ratatouille to steamed broccoli. Don't limit creativity or difficulty of dishes; I like to think I have a greater range and am a better cook than a stereotypical amateur at home :p

    You may have a club sandwich which is simple and healthier. Take 1 bread, add boiled chicken or tuna fish pieces with tomato & cucumber slices, then take another slice of bread, add boiled vegetable pieces whatever you like. Add salt and tomato sauce in both sides for taste.

I follow the recipe exactly, except I brine the chops in 2 quarts water, 1/2 cup salt and 1/4 sugar for 2 to 4 hours. Dry off before cooking. I also sprinkle fennel pollen on them before cooking. They are over-the-top with caramelized fruit - this pic is figs and pears, but just pears or apples would be delish too - throw in a few berries if you have them. For sides - this was roasted baby potatoes, but mashed sweet potatoes (or butternut squash) with brown butter and sage is so appropriate and seasonal. Add a roasted green vegetable. This is brocollini, but asparagus or green beans or brussels sprouts will be equally appropriate and give a good color to the plate.

    Hollandaise, beurre blancs, marinara, chicken gravy.

    I sweat this is not to gloat; I really do need ideas
