Any meat can be , whether it is palatable is another story. The reason chickens don't usually get preserved is they can be eaten in one sitting , hard to do with a pig or cow, so you turn them into dry sausages.

If you are talking about chicken jerky then yes - lots of turkey jerky available. However smoking does not preserve any fresh meat. I smoke chicken breasts frequently in a lil chief smoker then bring them to the oven and finish cooking through cool and freeze for later use - works great as salad topping, chicken salad, chicken enchiladas etc.

Smoking alone does not "preserve" foods.
The pork butt that I smoke for pulled pork sandwiches will go "bad" just as fast as the roast that I cook for Sunday Dinner.
Preservation for long time storage has to do with the amount of moisture that is retained in the food.
You need to follow proper procedures for individual foods.
