I am looking for a good recipe for ginger bread, something similar to zucchini bread, NOT the cookies?

I'm looking for something that bakes up like a cake. Links appreciated.

    try this one, this recipe has zuccini though to make it moist.

    cooking time: 1 hour 30 min prep

    ingredients:

    3 cups zucchini, grated

    1 teaspoon salt

    3 cups flour

    4 teaspoons ginger

    2 teaspoons baking soda

    2 teaspoons cinnamon

    1/4 teaspoon allspice

    1/4 teaspoon nutmeg

    1 cup butter

    3/4 cup brown sugar, firmly packed

    3/4 cup molasses

    2 eggs

    1 cup hot coffee

    procedures:

    Toss grated zucchini and salt in a colander. Drain 30 minutes.

    Meanwhile, mix dry ingredients in a small bowl.

    Cream sugar and butter in a large bowl.

    Add eggs and beat until well combined.

    Add molasses and mix well.

    Rinse and squeeze zucchini and add, stirring well.

    Add flour and coffee alternately mixing well after each.

    Pour into a greased and floured 9x13" pan.

    Bake 30 to 35 minutes at 350°F

    Cool on a wire rack about 30 minute before slicing.

    Zingerbread is done when top springs back.

    Sorghum Gingerbread

    INGREDIENTS:

    * 1/4 cup vegetable shortening

    * 1/4 cup butter

    * 1 cup hot water

    * 1 cup sorghum molasses or regular molasses

    * 3/4 cup sugar

    * 1 1/2 teaspoons ground ginger

    * 1 1/2 teaspoons ground cinnamon

    * 1/2 teaspoon salt

    * 2 teaspoons baking soda

    * 2 3/4 cups all-purpose flour

    * 2 large eggs, well beaten

    PREPARATION:

    In a saucepan combine the shortening, butter, water, molasses, sugar, ginger, and cinnamon. Bring to a boil, stir, then remove from heat and set aside to cool.

    Sift flour, baking soda, and salt together. Add cooled molasses and sugar mixture; stir until well blended. Stir in well-beaten eggs.

    Pour into a generously greased and floured 9-x12-inch baking pan. Bake in a preheated 350° oven for about 25 to 35 minutes.

    Makes 1 pan of gingerbread. Serve warm or cooled, with whipped cream or dessert sauce.

    1/2 cup shortening

    1/2 cup sugar

    1 egg

    1/2 cup molasses

    1 1/2 cups flour

    3/4 tsp salt

    3/4 tsp baking soda

    1/2 tsp ground ginger

    1/2 tsp cinnamon

    1/2 cup boiling water

    oven 350

    cream shortening and sugar til light. Add egg and molasses beat thoroughly. sift together dry ingredients and add alternately with water. bake in greased and floured 8x8 pan for 35-40 min
