What is a good and simple dish for a potluck?
One of the ladies is bringing a spinach dip and another is taking a bean salad. I want to take something that doesn't require a lot of prep time and will go over well.

Ideas: meatballs w/ red sauce or bbq meatballs. Kielbasi w/ brown sugar (so easy to make). I once went to a potluck and a women bought 10 micky d's cheese burgers and cut them into forths, it was so funny!

Potluck Casserole:
1¼ hours 15 min prep
16 servings
2 lbs ground beef
4 cups onions, chopped
2 cloves garlic, minced
3 medium green peppers, chopped
4 cups celery, diced
1 (5 3/4 ounce) jar stuffed green olives, undrained
1 (4 ounce) can mushrooms, drain
1 can condensed tomato soup, undiluted
1 (8 ounce) jar picante sauce
1 (18 ounce) bottle barbecue sauce
2 tablespoons Worcestershire sauce
4 cups medium egg noodles, cooked and drained
1 cup cheddar cheese, shredded
1. Brown ground beef, onions and garlic; drain.
2. Add remaining ingredients except cheese; mix well.
3. Place in a greased casserole dish and cover.
4. Bake at 350 degrees for 1 hour or until hot and bubbly.
5. Sprinkle with cheese just before serving.

If you have a crock pot or a chafing dish, buy some pre-made frozen meatballs, pour campbells mushroom soup over them and simmer in the hot pot/chafing dish. Sort of like fake swedish meatballs! You could also do little smokies in BBQ sauce also in the crock pot/chaking dish. if you don't have a hot plate, how about this... tomato wedges, black olives, and sliced red onions marinated in balsamic viniagrette (Newmann's own is a good one) served with crusty bread. My family loves it! hint: marinate the onions and olives for a longer time so they pick up the flavor of the dressing, then add the tomato at the last minute so they don't get too mushy. You could also do sliced tomato and fresh mozzarella cheese slices drizzled with balsamic and basil, served with bread...like a quick and easy bruschetta. Always a big hit, and fresh and easy.

Taco Salad: takes about 20 mins to prepare.
1 Large tupperware bowl.
1 head of Lettuce
1 Onion
2 Bags Kraft shreaded cheese
2 lb Hamburger
1 can sliced Black Olives
1 Bottle of Green Goddess dressing.
Fry hamburger in fry pan break into very small pieces. Strain & let cool
Put on bottom of bowel.
Chop Onion Sprinkle on top of Hamburger
Put Black Olives on top of Onion
2 bags shreaded cheese. Spread on top
Shread Lettuce
Pour over Bottle of Green Goddess Dressing
Mix until well blended & Serve.

A pack or two of chicken breast
1 or 2 cans of Cream of Mushroom Soup
1 box Stove Top
Mushrooms
Oil (as much as needed)
1/2 cup or less milk
Season your mushrooms as desired, cook them with a little oil, then put to side.
Season your chicken as desired. Heat Skillet with a small amount of oil and brown your chicken. While your cooking your chicken heat the soup and add milk. When all of the chicken is browned on both sides add them to a pan and cover with soup.
Bake in the over on 350 for about a half an hour or until you think the chicken is done.
While it's in the oven prepare your stove top according to the directions on the box.
Add mushrooms then stove top and bake for another 20 minutes or so.
There is also a similar recipe on the back of the stove top box.

This is easy and very good.
You need 2 cups of cooked chicken, in cubes. You can also used the canned chicken breast - it works just as well.
Saute 1 cup of chopped celery and one medium onion chopped in 2 T. of butter. When the celery and onions are tender, combine with the chicken, 1 can of cream of chicken soup and 2 cups of salted cashews. Spread in a buttered 1-1/2 qt. casserole and bake for 20 minutes at 350 degrees. Top with chow mein noodles just before serving.

Enchilada Pie:
2 lbs ground beef
1 yellow onion, diced
1 tsp salt
1/2 tsp pepper
2 cloves garlic, minced
2/3 cup Picante Sauce
1 28 oz can Enchilada Sauce
2 cans vegetarian refried beans
6 cups crushed Fritos Corn Chips
6 cups shredded Sharp Cheddar Cheese
Garnish with Sour cream, sliced olives, chopped cilantro
Saute hamburger, onion, garlic and spices until meat is cooked and onion is translucent. Add beans and picante sauce. Stir to mix and add enchilada sauce. Simmer for 30 minutes. Place 2 cups crushed fritos in baking dish and top with 1/3 of the meat mixture. Top meat mixture with 2 cups cheese. Repeat 2 more times, ending with corn chips and cheese. Bake at 375 for 45 minutes or until mixture is bubbling. Top each serving with sour cream, olives, and cilantro.

People never seem to think of bread at these things. How about getting rolls. Let them rise and bake. They are good at room temp. They don't have to be served hot. OR get some really good breads at a bakery. Slice at home and take to potluck in Tupperware or plastic bags. Bring a basket or lg. plate to serve from. Remember to bring butter or oleo. Have fun.

Chili
2 pounds of chop meat or turkey
1 large onion
2 cans of red kidney beans or pink beans
whatever good fresh peppers are available (habanaros are good if you like it hot, also jalepenos)
2 tablespooons of cumin
1/2 cup of oil
1 large can of crushed tomatoes
brown onion and pepers in oil, then add meat and brown. Drain of excess fat and add tomatoes. Cook for a little while then add beans. Serve over rice.
Very fast and easy. 1 hour start to finish.
