Any suggestions for making chocolate-covered strawberries??

In the past I've made them by melting Hershey's milk chocolate pieces. I've also used almond bark and they both do fairly well. I like to double dip them first in brown chocolate and then in white. The white always dries out when I melt it though. Any suggestions for keeping the white chocolate smooth? Any other suggestions overall? Thanks!! :)

    not sure wat u mean by the white drying out, but my mom used to have a chocolate business so i know stuff about this. a really cool thing to do is to dip the strawberry in brown(normal) chocolate, put in the fridge to get solid, and then dip the sides of the strawberry in white chocolate and make a tuxedo look. u can add a bowtie by using the spoon to put the white chocolate in a bowtie shape in the middle. something else fun to do is to drizzle chocolate on white, looks very classy. u can also dip, alternately, different strawberries in white and brown chocolate and dip them each in chopped nuts, sprinkles, etc. you just arrange them on a plate and use them at a party...really fun to eat. and the different colors and things u dip them in make it more exciting.

    If you go to the craft store michaels.. they have a good selection of melting chocolates. How do you melt it? Microwave? Double Boiler? I use the double boiler method.. Just make sure no water gets in the chocolate mixture... If you keep it at a warm temp you shouldn't have any problems.. I make a lot of chocolate truffles.. and have never had dried out white chocolate. Good Luck...

    White chocolate is sensitive to heat - more so than dark chocolate - and so when melting it, take great care. Keep the water in a double broiler between 110° F and 120° F. White chocolate chips are tricky to melt in particular because they contain the least amount of cocoa butter of any form of white chocolate.

    Try adding vegetable shortening, about 1/4 cup per 12 oz bag of chocolates. This will thin out the chocolate but not cause it to seize. Do NOT use butter, margarine or milk - you'll end up with a clump. Also make sure your berries are 100% moisture free before dipping. Make sure you use a double boiler or bowl over hot, but not boiling water. Reduce the heat to just a simmer while dipping. Try to maintain a constant temperature once the chocolate has melted. You can also melt some paraffin with your chocolate. Chocolatiers use this method for a glossy, crisp coating. Just shave in a little at a time until the chocolate is thin as you like.

    INGREDIENTS

    16 ounces milk chocolate chips

    2 tablespoons shortening

    1 pound fresh strawberries with leaves

    DIRECTIONS

    Insert toothpicks into the tops of the strawberries.

    In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.

    Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate to cool.

    OH dear i love chocolate covered strawberries!!! (spaz) ok well we have um...I can't remember the brand but its in a round container its called "dipping chocolate" it comes in round little 'wafers' and you just melt as much as you are gonna eat and its really good, it tastes better w/ the strawberries than hersheys (although itsa classic!) hope this helps! :D

    Try using 'white bark' instead of white chocolate bars ... the bark has more of the 'cocoa oil' in it, which helps it to stay moister and it should work better. I like my 'chocolate berries' with some 'just white,' some with 'semi-sweet dark chocolate, and some with both ... YUM!
