Any simple dinner recipes?
I'm in charge for cooking for my family tonight and I can cook anything.
I need a simple and delicious recipe. I love to use boneless/skinless chicken, but any other easy recipes that involve other meat is fine too!

Below are several ideas for you, the first is my favorite, but not as simple as you may be looking for.
Chicken Quesadillas:
Marinate your chicken breasts in fahita sauce. (I use World Harbor brand...I think that's the name-clear bottle, blue lid-Delicious!) Bake in the oven on 400 degrees until done (about 20 minutes). In the meantime, open 1-2 cans of diced green chilies (depending on your taste.) Cut the chicken into bite-sized pieces. If you have a quesadilla maker, heat that, otherwise you can use the microwave. Put a soft tortilla shell first, then layer the chicken, cheese, green chilies and bacon bits or crumbled bacon. Place another tortilla shell on top and heat until the cheese is melted. Serve with sour cream.
I also make a dinner where I take pizza dough, spread it out on the pan, put on bologna, or salami, or both, (or any other type of pre-packaged lunch meat you have and/or like) with some cheese, roll it up, put butter and garlic salt on the top, and bake it in a 375 degree oven for about 20-25 minutes until golden brown on top, and not doughy inside anymore. Slice it up, and it feeds several people. Potatoes and veggies go good with this meal.
You can also make shephard's pie with 1/2-1 pound ground turkey meat, cooked, mixed with 1-2 cans of creamed corn. Put that in the bottom of a baking pan and spread mashed potatoes on top. I usually put american cheese on top, but you don't have to. Bake in a 375 degree oven for about 10-15 minutes. Make gravy for people to put on top, if they want it.
I also make what I call "little pizza's". I take the buttermilk bisquits that come in the blue can in the refridgerated section. I cook up 1/2 pound of turkey meat (but you can do it without the meat) and mix it with tomatoe sauce that I make myself. Put a little bit of the meat/sauce mixture, or the sauce, on each one with a little bit of velveeta, mozzarella, or american cheese on top. Bake in a 375 degree oven for about 6-8 minutes (keep an eye on it so they don't burn.) Two cans of biscuits, make 20 little pizza's, served with potatoes and a veggie. Yum!

Chicken dish- 500g-1kg chicken breasts, 1-2 containers of creme fraiche(or sour cream) 1 bottle of chilli sauce Cut chicken breasts into quarters. Put in an oven proof dish. Mix together creme fraiche and chilli. Pour over chicken. Cover. Cook for 20-30 mins 180-200 deg. Cel Serve with rice and boiled vegetables. I find the best recipes come from childrens books. The library is a good source. Roast chicken is also a very easy dish. Wash and pat dry chicken. Put it in an oven proof dish. Peel and halve potatoes. Put it around the chicken. If you want a garlicky taste, peel and crush at least 3 cloves of garlic and spread it over the chicken. Or you can take a few sprigs of rosemary, rub a few leaves over the skin of the chicken. sprinkle the rest over. Cook for about an hour. Enjoy

Chicken Quesadillas
Cook slivered chicken in taco seasoning according to pkg
Place 12" tortilla in greased fry pan
Add shredded cheddar cheese
Add chicken
Top with more cheese
Cover with another tortilla
Cook on med-low until cheese is melted enough to flip
Cook for another minute or two
Optional ing: Sliced black olives, onions, tomato, green chilis
Repeat according to family appetite

Chicken Tortilla Soup
INGREDIENTS
·3 skinless, boneless chicken breasts
·oil
·1/4 teaspoon ground cumin
·2 (14.5 ounce) cans chicken broth
·1 cup corn kernels
·1 cup chopped onion
·1/2 teaspoon chili powder
·1 tablespoon lemon juice
·1 can rotel tomatoes
·corn tortilla chips
·1/2 cup cubed Monterey Jack cheese (optional)
DIRECTIONS
In a skillet over medium heat, sautee the chicken in the oil for 5 minutes. Add the cumin and mix well. Place the chicken in a large pot, add the broth, corn, onion, chili powder, lemon juice and tomatoes. Reduce heat to low and simmer for about 20 to 30 minutes.
Place cheese divided into individual bowls. Pour soup over cheese and drop in chips. This causes the cheese to melt and you can stir it up with your spoon as you like.

Chicken Fajitas
INGREDIENTS:
* 2 tablespoons canola oil
* 3 boneless chicken breast halves, cut in thin strips
* 1 medium onion, cut in wedges
* 2 cloves garlic
* 4 mild green or red chile peppers, seeded and sliced
* 1 sweet red bell pepper, seeded and cut in strips
* 1 green bell pepper, seeded/cut in strips
* 1 zucchini, trimmed, cut in strips
* 8 flour tortilla, warmed
* 1/2 cup sour cream
* guacamole
* 1 bunch green onions, trimmed, sliced
PREPARATION:
Heat the oil in a heavy skillet; cook the chicken strips over high heat, stirring constantly, for 5 minutes, or until cooked. Drain and serve.
Add the onion, garlic and chile peppers to the oil in the pan and sauté over high heat for 2 minutes. Add the bell peppers and zucchini; cook over high heat for 4 minutes, or until the vegetables have begun to have a blackened look around the edges.
Return the chicken to the pan and heat until sizzling hot. Serve right away, with warm tortillas, sour cream, guacamole, sliced green onions, and chopped tomatoes. Serve with hot cooked rice and refried beans, if desired.
Serves 4.

Boil the chicken in a mixture of pineapple & orange juice (1/4 cup of each for every 2 pieces of chicken). Add whatever seasonings your family likes. (I usually add a bit of hot sauce.) You can cook it as slowly or as quickly as you like. Cook until the juice has boiled down to a glaze. Rice or couscous makes a great side, along with some fresh fruit.

Chicken Helper. I know the stigma that goes with Hamburger Helper, but I am telling you Chicken Helper the fettuccine Alfredo one is so delicious. I hate Hamburger Helper but the Chicken Helper is so good and all you need is 1-1 1/2 pounds of boneless skinless chicken breast, milk, water, butter. The directions are so easy.

Cook or grill the chicken, season and cut into strips.
cook a bag of pasta, fettuccini, spaghetti, etc as directed
combine the chicken and pasta w/ a jar of alfredo sauce.

Slice the chicken into strips, spice as you see fit and slow cook on the stove using minimal olive oil. Boil your favorite pasta. Once the chicken is done cooking add alfredo sauce, stir occasionally while on simmer until warmed. Mix ingredients together and serve with garlic toast.

boil some spaghetti in a pot. in a frying pan melt some butter and throw some garlic in the butter and cut up the chicken and cook it in the butter..(you can use shrimp too) drain the spaghetti.Put it in a big bowl and pour the buttered chicken or shrimp over it ...there dinner... Italian bread goes good with this....
