Can I make, bake and freeze Cauliflower Cheese?
I've bought a massive Cauliflower today and want to make individual portions of Cauliflower Cheese to freeze for lunches.
Does anyone have a recipe for this which will enable me to freeze it?

Just cook the lot, and then serve into snack sized portions in freezer containers and freeze.
Cauliflower Cheese
Ingredients:
•25g butter
•1 onion, sliced
•1 cauliflower, halved and cut into florets
•25g flour
•300ml whole milk
•125g Cheddar cheese
•½ tsp Dijon mustard
Directions:
1. Heat the butter in a saucepan and add the onion. Slowly cook for 8-10 minutes until soft. Then add the flour, stir together and take off the heat.
2. Meanwhile, bring to the boil a large pan of water and add some salt. Add the cauliflower, return to the boil and cook for 3-4 minutes so it still has a bite. Drain really well in a colander, shaking it to get it to release all its water.
3. Add a good splash of milk, beat until it is smooth, then add the rest, again stirring until smooth. Return to the heat, stir occasionally and bring to the boil – it should be a thick sauce – then remove and stir in 75g Cheddar, mustard and seasoning to taste.
4. Mix the cauliflower with the sauce and transfer to a wide, ovenproof baking dish; the more surface area, the more crispy top you’ll get. Scatter with the remaining cheese and place under the grill for 5 minutes until it is bubbling and golden on top.

Sure you can. Part boil the cauliflower in salted water (about 5 mins), pour a bechamel sauce over it then sprinkle with grated cheese. Under the grill till the bechamel starts bubbling and the cheese goes nice and toasted brown. Be sure to let the portions you're going to freeze cool down well before freezing, but otherwise, no problem.

Cauliflower Cheese freezes without any trouble. Just use your normal recipe and pop in the freezer until you need it.

Works beautifully. slightly undercook the cauli, use a good cheese sauce and freeze in portions - lovely.

Vegetable is not only a medical term, it is a cooking term. So the qualifications as a vegetable are not very coherent, which is why we have cases like the tomato: people argue both ways.

cauliflower is very watery. drain it on a towel for awhile or see if you can use it frozen in your dish

Yes, as above. But, as someone else said, you will need to cook from frozen or you will end up with a separated, watery mess...
