What kinds of meals can I make that are simple and can be frozen and reheated later?

I am starting a new job this week, involving me cooking for a father and his son. I will prepare several meals for the week and freeze them so he can just warm them up as they are ready to eat them.

Can you give me any suggestions for simple meals.

I like to cook from scratch, hardly ever do I use prepackaged meals (i.e. hamburger helper)

And there is a peanut allergy.

    Casseroles,,meatloaf,, pot roast,,chicken... Things like this would be easy to heat up.

    Lasagna

    Chili

    Beef Stew (any kind of stew)

    Meatloaf

    Pulled Pork (both bbq'ed and cooked pernil style--you can then divide it up and freeze and make into other dishes)

    Casseroles

    Meatballs (you can make these and separate and pull them out to make different meals)

    Stuffed Peppers

    Enchiladas

    Burritos

    Calzones

    Chicken (you can roast a chicken and freeze it and take it out when needed)

    I work too and oftentimes I do the bulk of the cooking Sundays and freeze or make things that I can turn into something else really quick during the week.

    Chicken and rice Casserole

    1 pound boneless chicken breasts (or pork chops)

    1 can beef or chicken gravy

    1 can beef or chick stock/broth

    1 large onion sliced

    1 bell pepper sliced (optional)

    1 tomato sliced (optional)

    1 can sliced mushrooms

    2 cups water

    1 cup uncooked regular rice

    1 large baking dish sprayed with Pam

    Salt & pepper

    Preheat oven to 375

    Season meat and lightly brown in a pan

    Take prepared pan and spread out the uncooked rice

    When meat is brown place on top of rice

    Pour over gravy and broth

    Add onions, bell pepper and tomato slices over each piece of meat

    and then pour over the water

    Cover with foil and bake for 35 minutes. Remove

    foil and bake another 5-10 minutes or until most of the

    liquid is absorbed or cook less if you want juicer rice.

    I'm sure there are tons more, but here is just a few ideas:

    - Stews (chicken, beef, lamb)

    - Pot pies (you can make extra stew and have one meal of stew and use the same stew to put in the bottom of a dish and top with pastry for a pot pie)

    - lasagna or baked penne topped with cheese

    - sheppards pie

    - meatloaf

    - hamburgers or chicken burgers

    - chicken fingers (bread the chicken stips, then freeze them)
