Does anyone have a Sweet Potato Souffle' or Casserole recipe?

I tasted a Sweet Potato Souffle last year and it was AWESOME!!

It had walnuts,brown sugar, marshmallow .... the works!! But haven't been able to find a similar recipe.

If you have one and wouldn't mind typing it I would really appreciate it!

I'm a Mom who has 2 US Soldiers and they will both be home with us for the first time this Thanksgiving in 9 years!!!! I know they would love this!!

    I can't think of anyone I'd rather give this recipe to. Tell them thank you. <3

    This is an old family recipe, and we use a pecan mixture on top:

    3 cups mashed sweet potato

    1 cup brown sugar

    2 eggs, beaten

    1 t. vanilla

    1/2 cup milk

    1/2 cup melted butter

    pecan topping:

    1/2 cup brown sugar

    1/3 cup flour

    1/3 cup melted butter

    1 cup chopped pecans

    Combine first 6 ingredients, and pour into greased 1.5-2 qt. casserole dish.

    Mix remaining ingredients together, sprinkle on top, bake 30-40 minutes at 350.

    BUT, for the marshmallow topping, bake just the sweet potato mixture for about 20-25 minutes, and then add miniature marshmallows to the top, and bake until they turn golden brown on top.

    My southern mamas sweet tater casserole 3 cups mashed sweet potatoes (canned) 1 cup sugar 1/2 tsp. salt 2 eggs 1/3 stick butter 1 tsp. vanilla Topping: 1 cup brown sugar 1/3 cup flour 1 cup chopped pecans 1/3 cup melted butter Preheat oven to 350. Mix potatoes, sugar, salt, eggs, 1/3 stick butter and vanilla in a large bowl with an electric mixer. Pour into a casserole dish. In a separate bowl, mix topping ingredients well and sprinkle over top of casserole. Bake for about 35 minutes.

    Preparation:

    Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned.

    Serves 6 to 8.

    EASY SWEET POTATO SOUFFLE

    3 c. mashed, cooked sweet potatoes (about 2 lg. sweet potatoes, peeled)

    1/4 c. brown sugar

    3 tbsp. butter

    4 eggs, beaten

    1/4 c. light rum or orange juice

    1/4 tsp. cinnamon

    Preheat oven to 350 degrees. Combine mashed sweet potatoes with rest of ingredients. Beat well by hand or with electric mixer. Fold into buttered 2- quart baking dish. Bake for 45 to 50 minutes or until a knife inserted into center comes out clean and top is firm and golden.

    Sweet Potato Casserole

    Ingredients:

    •4 cups sweet potatoes, cooked, mashed

    •1/4 cup butter, softened

    •1/2 cup sugar

    •3 eggs, beaten

    •1/4 teaspoon salt

    •1/4 cup pecans or walnuts, chopped

    Preparation:

    In large mixing bowl, beat together hot mashed sweet potatoes, butter, sugar, eggs, and salt until fluffy. Turn into a 1 1/2-quart baking dish and sprinkle with pecans or walnuts. Bake at 350° for 45 minutes. Serve immediately.

    Serves 6.

    Sweet Potato Fluff

    3 cups mashed cooked sweet potatoes (8-10 fresh or two large cans)

    ½ cup sugar

    ¼ cup melted butter

    1 (5 oz.) can evaporated milk

    ¼ tsp. kosher salt

    1 tsp. vanilla

    Dash of each: cinnamon, nutmeg, orange zest

    Topping:

    ½ cup brown sugar

    ½ cup chopped pecans

    ½ cup flour

    2 Tbsp. butter

    Preheat oven to 350ºF. Combine topping ingredients w/ a fork until crumbly; set aside.

    Beat potatoes well with a mixer until fluffy. Stop and remove any strings from the beater at least twice; this makes the potatoes smooth. Stir in remaining ingredients and pour into a greased casserole dish.

    Sprinkle topping on potatoes and bake for 40 minutes. Serves 8.

    Cane Syrup Glazed Sweet Potatoes

    Sweet Potatoes:

    4 lbs. sweet potatoes, peeled and cut into 1" cubes

    1/3 cup cane syrup

    1 stick butter

    1/2 tsp salt

    2 tsp grated orange zest

    2 Tbsp orange liqueur

    Streusel Topping:

    1/2 cup butter, at room temperature and cut into pieces

    1/2 cup light-brown sugar

    1/2 cup all-purpose flour

    1/4 tsp ground cinnamon

    1/4 tsp salt

    1 cup toasted pecan pieces

    2 cups miniature marshmallows

    Preheat the oven to 375ºF.

    Sweet Potatoes:

    Arrange the potatoes in 13 x 9 x 2" glass baking dish. Combine the cane syrup, butter, and salt in a small saucepan over medium heat. Bring to a boil, then remove the pan from the heat. Stir in the orange zest and liqueur. Pour the sugar mixture over the potatoes, and toss the potatoes to coat. Cover the dish tightly with foil. Bake for 50 minutes, and then remove the dish from the oven, remove the foil, and bake until the potatoes are tender and the syrup has thickened slightly, basting occasionally, about 20 minutes.

    Streusel Topping:

    Combine the butter, brown sugar, flour, cinnamon, salt, and pecans in the bowl of a food processor fitted with a metal blade, and pulse the mixture until it resembles coarse pebbles. Transfer the mixture to a bowl, then add the marshmallows and toss to combine.

    Raise the oven temperature to 425ºF. Remove the baking dish from the oven and cover the potatoes with the marshmallow streusel. Return to the oven, and bake until the topping is bubbly and browned, about 10 minutes.

    This is NOT sweet, but if you're having a crowd and need a 2nd SP dish, this one is excellent and a nice foil for all the sweet going on in other dishes.

    Savory Sweet Potatoes

    3 cups cooked sweet potato (8-10 fresh or 2 [29-oz] cans)

    ½ stick real butter

    3 strips bacon

    1 small onion, chopped

    1½ cups grated sharp cheddar cheese, divided

    Salt and black pepper to taste

    Preheat oven to 350ºF. In 9"x13" casserole dish, coarsely mash potatoes and butter with fork. (works best when potatoes are hot.) Fry bacon and drain well, then chop it. In bacon drippings, cook onion until clear. Add bacon pieces, onion, 1 cup cheese, salt, and pepper to potatoes, stirring with fork to combine all. Spread out evenly in pan.

    Top with ½ cup cheddar cheese. Bake for 20 minutes.
