how to improve this oatmeal chocolate chip cookie recipe?

    It doesn't call for any baking soda or baking powder and I can't imagine the cookies being any good without one of those. How are they going to raise properly? My oatmeal cookie recipe calls for both.

    I don't know if caster sugar is white or brown sugar but I think both are needed for oatmeal cookies.

    I'm not familiar with these measurements but it doesn't seem to call for nearly enough flour either. Cookies without enough flour in them tend to get all flat and spread out.

    Last but not least, I would replace the chocolate chips with craisins. I love oatmeal cookies with craisins in them. Yummy!!!

    This is my favorite Oatmeal Cookie recipe. I like the addition of the coconut. They don't taste like coconut cookies but they're better than regular oatmeal cookies.

    Coconut Oatmeal Cookies

    1 cup white sugar

    1 cup brown sugar

    1 cup butter

    1 tsp salt

    1 tsp baking soda

    1 1/2 tsp baking powder

    1 cup coconut

    2 cups oatmeal

    2 1/2 cups flour

    1 tsp vanilla

    2 eggs

    1 1/2 cps Craisins or chocolate chips (optional)

    Mix sugars, butter, & eggs together well. Add remaining

    Ingredients and mix well. Drop by teaspoonfuls on a cookie

    Sheet. Bake 10 -12 minutes in a 350 degree oven.

    I would have thought you might need to add some sort of butter or margarine, but perhaps not.

    Add some raisins to it or some chopped dates - fruit works well in cookies. You could also add some cocoa powder to make them "double chocolate" cookies.

    Add more chocolate chips and butter.

    Perhaps a bit more sugar if you have a sweet tooth.

    I love adding cinnamon & sometimes nutmeg. I also do half choc chips & half butterscotch chips. Or you can use choc covered raisins.

    Add some dried cranberries or blueberries.
