Brioche/French toast question?
I was gifted with a bag of brioche mix for the breadmaker so I made it tonight on a whim. I don't know what to do with this nice eggy-buttery bread now. I guess it could be used for French toast. Only every single recipe I've ever seen is for sweet French toast with sugar and berries and such. My husband says French toast is not sweet at all. (boggles)
OK, so who's right, and how can I use this brioche? Dream up some ideas so it doesn't go to waste. :)

Toast it (or leave it plain) and eat it with soups.
Use it to make bread pudding. Cube brioche and mix with some eggs, milk, chopped chocolate, and raspberry jam. Put in a baking dish and bake until golden and puffed.
Brioche churros: Cut the brioche into 1-inch-thick strips. Dip in beaten egg and pan-fry in butter in a nonstick skillet until golden-brown on both sides. Sprinkle with powdered sugar or granulated sugar.
Walnut and brioche stuffing Cut the brioche into medium-size cubes and dry out. Mix with chopped walnuts, sautéed shallots, and lots of chopped fresh flat-leaf parsley. Add some chicken broth and bake until heated.
Eggs in a basket Cut a round hole in the center of each of two slices of brioche. Melt some butter in a nonstick skillet over medium heat. Add the brioche slices and toast on one side. Flip and then crack an egg into each hole. Continue cooking until the eggs are done to your liking.
Sweet panzanella salad Soak dried brioche cubes in a honey-lime dressing. Toss with chopped seasonal fruit and a generous amount of torn mint leaves.
Fish skewers with brioche croutons Toast some brioche cubes in garlic butter. Alternate the bread on skewers with thin lemon slices, fresh bay leaves, and chunks of swordfish, and then grill.
Ultimate grilled cheese Make a grilled cheese sandwich with slices of brioche, sliced Italian fontina cheese, and crispy slices of pancetta.

Brioche is a excellent eggy sort of French bread. Significant 'holes' unlike average white bread. It is softer and less dense. The French toast phase is only a regular french toast, general eggs however carried out with Brioche. Quality marketing gimmick for the chain.

My favorite French Toast is made at Highland Bakery in Atlanta and it's made with brioche. The bread itself not sweet at all. They give you a little cup of their cinnamon syrup and it's topped with seasonal berries. They even have a peanut butter french toast, which has been on Food Network. When I make it at home, I don't use anything to sweeten the actual bread, but I do like to add some cinnamon to the milk/egg mixture.

Brioche is delicious on it's own. Toasting it and adding butter and jam is great also. Many restaurants are using brioche dough buns for their hamburgers for their complex taste and ability to stand up to sauces. If your husband is adverse to sweet french toast, you can just bake it instead of cooking in a pan and call it a bread pudding.

Most people have powdered sugar or syrup on their French toast, which makes it sweet anyway. I don't see anything wrong with the bread being a little sweet to start. Follow your instincts, your profile shows you obviously have it goin' on!
