Side dish for dinner tonight?

I'm making a three cheese chicken penne tonight, what would be a good side dish?

    Pear & Gorgonzola salad

    ripe Bosh pear peeled, cored and sliced

    Bed of mixed greens or baby spinach stems removed

    plate greens top with 2 slices pear

    top with crumbled Gorgonzola

    Drizzle with aged (the older the better) balsamic vinegar

    Pan grilled asparagus

    Snap woody ends off of asparagus

    on a platter season with sea salt, fresh ground pepper and toss with premium olive oil.

    Heat a non stick skillet on medium and add asparagus. Toss frequently until asparagus begins to char.

    If you can not find ripe pears you can use apple slices - pear is much better.

    Serves 6

    Ingredients:

    1 lb of Green Beans, trimmed

    1 lb Baby Yukon Gold Potatoes, halved (or if very big cut in quarters so that they are all the same size so they cook evenly)

    Salt and pepper

    2 Tbsp Fresh Chopped Parsley

    5 Tbsp Extra Virgin Olive Oil

    3 Tbsp Balsamic Vinegar

    1 Small Red Onion, thinly sliced

    2 Garlic Cloves, minced

    Process,

    1) In a large pot filled with cold water add the potatoes, bring to a boil and cook for about 20 minutes or until the potatoes are fork tender.

    2) Five minutes before the potatoes are done add the green beans and cook them together for the last few minutes.

    3) Drain and let them cook slightly, add them to a large bowl and add the red onion. Season with salt and pepper to taste.

    4) In a small bowl whisk together the garlic, vinegar and olive oil. Pour over the potato mixture and toss gently. Sprinkle with the fresh parsley and serve immediately!

    This dish is best when served at room temperature.

    Individual bundles of green beans or asparagus wrapped with a piece of bacon and baked in the oven. Good stuff.

    Fresh Green Bean salad with fresh lemon juice, fresh basil, garlic, and dijon vinaigrette.

    Your preliminary menu is perfect; that's one of my favorite salads:) .... I think the scalloped potatoes are perfect, but mashed would be good too. I wouldn't do the cous cous, unless you're sure his boss likes it (my husband and son-in-laws DON'T like cous cous) ......Maybe a simple fruit sorbet for dinner (Hagen Daz has good ones)
