What are some good ways to fix chicken with cashews. I have some ideas how chicken coud be real good with?

Crush the cashews. Take chicken and dredge in a wet bath of egg, dijon mustard (for the mustard, i normally would do 1/4 cup to 3 eggs). Place chicken in the next plate of cashews, bread crumbs/panko crumbs, salt and pepper. Add chicken to pan with a few TS of olive oil over medium heat. Cook until chicken is done to your liking, flipping it halfway through.

I figure a stir fry with a spicy, but sweet sauce. A hot pepper in a little oil with onions and garlic. Maybe snow peas or whatever is saying cook me from the crisper.

Then just before I take it off the flame drizzle a little honey over the mix for the last minute or so.
