Eating store-bought fish raw?
I've made sushi before using raw salmon bought in vacuum packaging from the supermarket. Safe to say that I was fine afterwards.
This time round I bought tuna steaks which weren't in a vacuum packaging. I put the tuna in the freezer for about a week and it's now defrosting in the freezer. Is it safe enough to eat raw once it defrosts?

Tuna in general doesn't have parasites. I think you are referring to the Ahi steaks they sell at Wal-mart? I wouldn't eat them raw. I have eaten sushi grade blue-fin tuna frozen from a neighbor who went fishing. It was frozen for days! Delicious. In Japan there is "tuna tataki". Look it up. It's when you pan sear the outsides with raw insides. That is what I would do with your tuna steaks.

Yeah, a lot of sushi places do this to kill any parasites and keep the tuna for a few days. You should be fine, just DON'T refreeze after you've defrosted it.
