I'm a parent & out of the blue I received an email from my son's teacher. How do I respond?

It says I wanted to take this opportunity to say how much I am enjoying your son in class this year. He is doing such a great job and I love his joy of learning Science!

I appreciate him and always look forward to another day we get to spend together!

Thank you for sharing your son with me each day!

With a thank you and by sharing it with your son. Normally, you only hear from a teacher if there is a problem. This teacher took a few minutes to say something positive. Now out of the ordinary it must have been so you as a parent. When I taught I would do that also. I got the same reaction as you are having. This is a teacher you want to remember when your son needs a reference for college or a job.
