    I could not tell the difference but lately I have been using a can of creamed corn in place of the liquid called for. Better "corny" taste and it goes with the cheddar cheese and minced jalapeno peppers I put in the corn bread.

    the only reason buttermilk was ever used is it provided an acid to activate the baking soda. If your recipes calls for it, its a very old, time honored recipe that was developed before baking powder was invented.

    I personally cannot tell any flavor difference between using milk or buttermilk, all things considered.
