Left over cooked pasta shapes, with pesto, grated parmesan, baby spinach leaves, all stirred together, makes my favourite 'pasta salad'.
Adding some chopped sundried tomatoes will make it 'pop'.
Left over roasted vegetables [diced up] and mixed with some steamed cous-cous or quinoa with a little lemon juice & a little olive oil, makes a good [grain] salad.

I have been eating salads for dinner for two years now and gotten to where I don't miss the meat and potato type meals and love the salads but i make my own dressings and put some tasty things in the salads. Making your own dressings will be cheaper and healthier because all of those preservatives are among the worst things for your health. One Basic dressing is virgin olive oil and wine vinegar with some basil and oregano,crushed garlic and a little salt and pepper. It will keep for weeks without refrigeration. My recipe was called Italian but my brother got the same recipe from a Greek guy who said it was Greek. Olive oil is the most expensive item but you will use it for weeks of meals so it is worth to get a good brand as cheap brands not only don't taste good but might have fillers. Virgin means the first pressing. Olives are pressed under pressure to squeeze out the oil. Ranch dressing can be made with Buttermilk and Mayonnaise with some chopped up chives or if chives are n ot available chopped up green onions using the green part and you can put the white part in the salad. Honey mustard is just mayonnaise, Dijon mustard and some honey. A simple tasty dressing is Olive Oil with Balsamic Vinegar which is salty so you don't need salt. I put items in my salad which are healthy and make it more filling like avocados, and sometimes fish like salmon, sardines, smoked oysters, or mussels, and other times bits of chicken left over form cooking chicken. I also use tomatoes, cucumbers, onions, and even fruit. I vary the ingredients with what is on sale at the store and I always shop at a discount store which makes the pricier items much cheaper. Around here we have Aldis which has begun to get some very good items for salads at very good prices. I like to put Feta Cheese which has salt so the salad needs no added salt. Olive oil adds a lot of the good flavor and is very healthy so without it very much is lost in fact so much so that I have never made a salad without good olive oil. And if you want to you can add slices of hard boiled eggs.

-A smaller container of cottage cheese, a banana, handful of walnuts - mash it all together, taste like banana nut bread.
-Slice up a cucumber and a tomato slices, pour some salad dressing on them.
-Buy a large container of Greek yogurt, put some in a bowl, add some raisins and nuts.
-Peanut butter on some multigrain bread, carrot sticks
