Anyone have any quick and easy recipes to share?

Even better if they are meals that are healthy and inexpensive to make, and if the leftovers can be frozen...lol is it too much to ask?

    *********CHICKEN CACCIATORE WITH NOODLES

    1/4 c. oil

    1 - 3 lb. chicken, cut up

    2 pt. jars Spaghetti sauce

    1 tsp. pepper

    1 clove minced garlic

    12 oz. pkg. noodles

    Parmesan cheese

    Grated cheese

    Heat oil in skillet. Brown chicken on all sides. Combine salt, pepper, sauce and garlic; pour over chicken. Simmer covered 25 minutes or until tender. About 10 minutes before chicken is done, cook noodles according to package. Drain. Arrange chicken on noodles. Sprinkle cheese over all. Serves 4 to 6.

    ********QUICK AND EASY CHICKEN ALFREDO

    2 chicken breast sliced

    2 jars Alfredo sauce

    2 c. mushrooms

    1 lb. fettuccine or any pasta

    2 tsp. butter

    Sauté chicken and mushrooms in butter until lightly brown. Pour in Alfredo sauce over chicken and let simmer for about 5-7 minutes. Pour mixture over cooked fettuccine or pasta. Sprinkle with Parmesan cheese.

    *******CUBE STEAK ITALIANO

    1 lb. cube steak

    1 onion

    1 green pepper

    2 tbsp. oil

    1 c. spaghetti sauce

    Slice cube steak into strips. Cut onion and pepper into strips. Sauté all 3 in oil. Stir in spaghetti sauce and cover and simmer 10 minutes. Serve over egg noodles.

    Spanish Rice

    The instructions for preparing the rice for this recipe are for the microwave, but pre-cooked rice can be substituted, or cook rice according to package directions on the stove top.

    1 lb. ground beef

    1 28 oz. can tomato sauce or Tomato Juice

    1 - 1 1/2 cups water

    1 onion, chopped

    1/2 green or red pepper, finely diced

    Black pepper to taste

    2 Tbl Paprika

    1 large can sliced black olives

    1 cup Jasmine rice

    1 3/4 cups water

    1 tsp salt

    1-2 Tbl Butter

    Brown ground beef with onion.

    Season with ground black pepper

    Add tomato sauce or juice, water, green or red pepper, black olives, Paprika and black pepper.

    Simmer for about 20 - 30 minutes.

    In a 2 quart microwave dish, combine 1 3/4 cups water, Jasmine rice, butter and salt.

    Cover and microwave on high for 5 minutes. Reduce heat to 50 % and microwave for 15 minutes more.

    Fluff with fork and add to sauce. You may choose not to add all the rice depending on the consistency of the dish.

    Turn off heat and let stand a few minutes before serving.

    This can be prepared early and reheated to serve later. It is excellent the next day. - Sauce can be prepared ahead. The finished dish should be slightly saucy, so don't add all the rice at one time.

    Chicken - boneless chicken, marinade in Italian dressing. Dip in instant potato flakes and bake at 350 for about 30 minutes to 45 minutes. The chicken will come out very juicy. Make a salad and cook instant potatoes and voila, you have a meal!

    I just fixed this yesterday - it is so easy.

    Pulled Pork

    Place a pork loin in crock pot - don't add anything. Cook on low about 5 hours or so.

    Remove to a cutting board and let sit a few minutes.

    Then shred it with your fingers (this way you can remove all the fat) - it doesn't take long.

    Transfer to a pot and add your favorite bottled bar-b-que sauce (as much or little as you like) and heat.

    Serve in buns. Pickles are good with this.

    First question, do you have a crock pot? If so, you can do just so many things healthy in that. Add chicken, celery, tomato (canned, diced) cabbage, carrots, any kind of been for fiber and top with water and use a couple of chicken bouillon cubes, let it simmer on med most of the day, and then prepare some really good rice and top it with your concoction! Have fun!

    CHICKEN CHILI

    Boil one pound boneless skinless chicken breast

    Cut it into bite-sized pieces

    Put it in a crock pot with 8oz shredded pepper-jack or monterey jack cheese, small (usually 15.5 oz) can of (I usually use black or great northern) beans (not drained) and 8 oz -16 oz salsa (however hot you want it to be) on high til hot (usually not less than an hour for me), stirring occasionally.

    You can add milk to make it thinner or thicken it with corn starch and water mixture.

    Mayo suprise:

    Take mayonaisse and carrots. Mix them up and cover them with pickle water. Throw in some onions. Put this all on a liver. Spray the concoction with spray cheese. Throw in some leaves from your backyard or n a nearby flower. Spit on it profusely. Let it sit on a plate coated with dirt in the sun for a week.

    Eat and enjoy. Keep an open window or a gun nearby.

    White Toast

    Take one piece of white bread. Place in toaster.

    Add toppings as desired.

    Can also be made with other kinds of bread.
