    This is really tasty:

    Cucumber-Dill Salad

    1 seedless European cucumber, or 2 American cucumbers

    3 tablespoons apple cider vinegar

    1 tablespoon sugar

    salt and freshly ground black pepper

    1 small red onion, sliced and broken into rings

    3 tablespoons finely chopped fresh dill

    Wash the cucumber(s) and partially remove the peel in lengthwise strips using a vegetable peeler or fork and leaving a little skin between each strip. Thinly slice the cucumber width-wise. Place the vinegar, sugar, salt, and pepper in a bowl and whisk until the sugar is dissolved. Add the cucumber, onion, and dill, and toss well. The salad can be served at once, but it will improve in flavor if you let the ingredients marinate for 5 minutes.

    Cucumbers and sour cream:

    Half a cucumber lengthwise and scoop out the seeds with a spoon. Slice the cucumber and put in a bowl. Add sour cream, green onion, salt and pepper to taste. You can also add a little dill weed or garlic salt.

    Slice cucumbers, tomatoes and onion. Toss with Italian dressing. Add some oregano, salt and pepper to taste

    Village Salad:

    Cut cucumber and tomatoes into 1 inch chunks. Slice some red onion very fine. Toss with greek dressing and crumbled feta cheese. Mint is also very good in this salad if you have it available.

    Balsamic & Basil Cucumber Salad

    Ingredients

    2 seeded, chopped cucumbers

    4 chopped tomatoes

    1 chopped red onion

    Salt and pepper to taste

    6 Tbsp. Balsamic & Basil Dipping Oil

    2 Tbsp. balsamic vinegar

    Directions

    Combine first 3 ingredients in large bowl. Whisk remaining ingredients; pour over salad. Makes 5-6 servings.

    1 large cucumber, peeled

    3 ripe tomatoes or a pint of grape or cherry tomatoes

    1/2 red onion, sliced into thin rings

    Salt

    Pepper

    Vinaigrette or Italian dressing

    This is very simple--slice the peeled cucumber into 1/4 inch thick slices--if it is very large, you may want to cut each of the slices in half or quarters. If using regular tomatoes, cut them into wedges. If using small tomatoes, cut them in half.

    Place the cucumbers, tomatoes, and onions into a bowl and season with salt and pepper (recommend sea salt and freshly ground black pepper). Pour some dressing over and toss.

    slice cukes and onions and dress with the following

    In a food processor blend 6 baby carrots with a 1/2 inch slice of peeled ginger root slowly add 1 part rice vinegar to 3 parts good salad oil, 1 tsp of sugar or splenda, salt and pepper to taste

    refrigerate the whole mess and serve the following day

    Peel and slice your cukes in rounds. Thinly slice a red onion in rounds. Layer the cukes and onions in a glass bowl. In a separate bowl mix together equal parts rice vinegar, olive oil, and water. Add a litlle soy sauce and a pepper and sesame seeds. Put all this in the fridge for at least an hour before serving.

    Peel and slice cucumbers( thin rounds) into a bowl and add Italian or Ranch dressing and chill to serve. Add a little finely sliced onion if you like onion.

    I like to cut up cucumbers, red onion and tomato. I then let them soak in some vinegar overnight.

    In a bowl put thinly sliced cukes, onions, celery seeds, vinegar and a sweetner. Let soak overnight or longer. Makes a great side dish.
