Have you a good recipe for left over cold chicken?

Need to make it go round a few people! Planning steamed rice with it.

    Make a white sauce, flavour with lemon and black pepper or a herb you like, add the chicken, some peas, maybe button mushrooms. Top with mashed potato, decorate with tomato halves, bake in a medium oven for around 40 mins., until top is brownish and the tomatoes are cooked.

    Yes I do! It's called Chicken Chip Bake. This isn't the exact recipe I use, but it's pretty close. I use onion powder instead of chopped onions, and I always use more cheese than it says to use.

    Combine 2 cups cooked chicken (diced), 2 cups chopped celery, 3/4 cup salad dressing or mayonnaise, 2 tablespoons lemon juice, 2 tablespoons chopped onion and 1/2 teaspoon salt.

    Mix all together lightly. Place in 8 x 1 3/4 inch round casserole. Sprinkle 2 ounces shredded American cheese, then 1 cup crushed potato chips. Bake at 350 degrees for 30 minutes or until hot.

    My grandparents said eww to the idea of the potato chips, but they really enjoyed it when I made it. It's a favorite in my immediate family, and my grandparents. Everyone who has tried it seems to love it.

    Sometimes I slice the cold leftover chicken and brown it with a little butter and make sandwiches with mayo and fresh tomato Anotther way is to dip slices in beaten egge then a mix of flour and seasoned beadcrumbs and fry in half butter and half oil can also make some chicken gravy from a one or two cubes of smashed chicken bouillion cubes, flour, and milk to pour over be careful though the cubes are very salty , I also make chicken salad dice chicken add,2 stalks celery and 2 or 3 sweet pickles mix with mayonaise salt and pepper to taste i stuff a nice fresh tomato with it ir serve on toast or buns Enjoy!

    I onion

    3 cloves garlic

    Tin of apricots in fruit juice

    Chicken stock (made with a cube will do)

    A few button mushrooms (optional)

    1 oz toasted almonds

    Few drops almond essence

    Oatmeal to thicken

    Chicken cut into same size pieces

    Measures aren't exact, do it to your taste.

    Fry the onion in a little olive oil, add the garlic cook for a few minutes, add the fruit juice from the apricots and the fruit cut up smallish, bring to a simmer.add mushrooms, cook for a bit, add some oatmeal and chicken stock, thicken to your liking, finally stir in a few drops almond extract, stir in the chicken and the toasted almonds.

    It looks a fiddle, but is dead simple, onion, chicken and apricots are the main ingredients, the rest is a moveable feast. I sometimes put peas in too, or use sour cream

    Serve with rice and a side salad.

    Curried Chicken Sandwiches Chicken BLT sandwiches Chicken tacos Chicken and dumplings Cover, reheat with lemon, rosemary, garlic 1 1/2 inch cut potatoes. Perhaps some onion. Good meal with whatever else you may desire on the side. Hope it all works out for you.

    Try to make a Special Fried Rice with you left over chicken! Friends and I all tried this recipe and all of our family really like it!     Curry chicken salad. It's delish and it really stretches it. I shred the chicken (It takes flavors on better than if you cut it) Add some grapes cut in 1/2, chopped walnuts, mayo, fresh ground pepper, salt and curry powder to taste (start w/ a little and work to taste from there, you can always add more but the taste is very overwhelming if you add to much) Optional: cut up a couple scallions to mix in.

    Mexican Roll Ups

    This is something I made up its a great way to use left over meat.

    Use one of your choice

    Shredded Chicken, shredded beef or shredded pork

    Put in skillet with 1 pkg of taco seasoning

    Add enough water so that you may simmer it, not to much

    After simmering like 20 min

    Place small amount in to soft burrito shell, I like to use the large ones.

    Roll them up and secure with toothpicks

    In deep fryer or skillet, brown til golden brown

    They will be crunchy

    Serve with sour cream, salsa or gucamole

    Dont forget to remove toothpicks !!!!

    Add it to this

    Olive Garden Alfredo Fettuccine

    1 pint heavy cream

    1 stick (1/2 cup) butter

    2 tablespoons cream cheese

    1/2 - 3/4 cup Parmesan cheese

    1 teaspoon garlic powder, add in more to suit your taste if you prefer

    Salt and pepper, to taste

    8 ounces fettuccine, cooked and drained

    In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat.

    Toss pasta lightly with sauce, coating well. Leftovers freeze well.

    If you're doing rice with it a nice curry or casserole would be great! Either recipe you can get a simple packet mix from the supermarket for the sauce and add plenty of vegetables to make it go around! yum!

    Oh, yes!

    It's called "Chicken Divan" ... Lots of recipes on Google (usually for turkey leftovers) but better with chicken.

    One of our family's favourites... always have to make it when they visit, and both the adults and the children go for it.
