    First- make sure you are getting the right cut of meat for crock-pot style roast. Before putting it into the crock-pot heat some olive oil in a fry pan and brown it well on all sides to get a nice caramelization-especially the perimeter where the fat should be all around. This will provide lots of good flavor. then put in the crock and cover with water. whatever vegetables you want over that and cook it low for 6 to eight hours.

    Cook the roast in beef broth as it is a thinner liquid and will be better absorbed by the meat. After the roast is done, make gravy from the cooking liquid. Mix flour and butter/margarine in equal amounts. Mash with a fork to mix well and stir into cooking liquid. Let thicken and return sliced meat to gravy.

    Remove the meat from the crock pot and cover with foil for at least 10 minutes before slicing. This allows the juices to go back into the meat and not come out when sliced. Do this while you make the gravy.

    Serve with mashed potatoes, green vegetable and dinner rolls. Mine is always delicious.

    I found this recipe for a roast in a crock pot and just love it.

    3 or 4 lb chuck roast

    package of Lipton Soup Mix

    can cream of mushroom soup

    can of stewed tomatoes

    Put the roast in the crock pot, and mix the lipton soup mix with the cream of mushroom soup and the stewed tomatoes, pour over and cook on low for 8 to 9 hours or until the roast is done. It will completely fall apart it's so tender and tasty, Hope you enjoy it, I too thought gross, but tried it and will never make another roast the traditional way ever again.

    I dont like to cook my roast in a crock pot you should try it in the oven, its is half the time and always tender!

    Try this:

    Preheat your oven to 350, take your roast season it the way you like it (garlic salt and greek seasoning for me) Then in a big pot heat up some olive oil on medium high sear all sides of the meat. Take the meat out put it on a plate, turn the heat to medium low chop up 3 to 4 onions just in half and sautee them in the oil until golden. While those are cooking; in a big measuring cup add 3 1/2 cups hot water, 1 1/2 beef bullion cubes, 1/2 cup of red wine, 1 tbs of Worcestershire, and 2 bay leaves. Add liquid to onions heat till boiling, return roast to the pot; cover and place in the oven. Bake 2 and a half hours, after 2 and half hours add whatever veggies you like (i usually put in potatoes and baby carrots), then just bake an hour and a half longer and its done! ... now try to resist adding more liquid i assure you it is enough with the lid on it its steaming and boiling.

    Source(s): This pot roast is an old family recipe, its so good!

    i have never had a dry roast come out of a crock pot! all i do is add 1-2 cans of beef broth, plus enough veggies (cut up) to feed the family & cook it on low for 8 hours! plus with the veggies in there you basically have a meal!

    Meat cooked in a crock pot tends to become dry in my experience. Best bet is to use the cooking liquid to make a sauce or gravy.

    Put in onions, green or red bell peppers, mushrooms, add the roast, cover with Spaghetti sauce, I love Newman's Stockaroni and if the roast isn't covered cover with beef or vegetable stock. It will be delicious. Remember if it is going to be in the crock pot for hours it needs to be on the low setting.

    too high I've done that I've cook a roast in the crock pot on high for a few hours and it was tender but dry try a lower temp next time no big deal ya live ya learn good luck

    It could be because the meat itself was to dry to start with, marinading it for a couple of hours before cooking should help.

    You did not have enough liquid added. You cooked it too long on too high of a temperature.
