Anyone have any good recipes for 1 (and a half)?
My husband works into the evening most days and isn't home in time to have dinner with my four year old and I. Does anyone have any good recipes or ideas for dinner that are smaller portions? I dislike leftovers and my husband will hardly touch them.

You could take your favorite recipes and decrease the recipes ingredients by 1/2 and then prepare the recipe(s).

Try using MyFridgeFood for the leftovers - it has a lot of easy recipe twists using what you already have in the kitchen. I'm not a fan of leftovers either so the quicker I can get rid of them the better :)

personally i like to freeze the leftovers, but if that bothers you just use half the ingredients. I find freezing leftovers usefull because the food that i cook usually requires me to make it in either 1 or two. i cant do it one and a half. plus my son is only two ys old, so he doesn't eat that much. i understand how you feel.

When you do your shopping, divide the products into the size portions you need for you and your child. Keep your husbands portion separate.
