Favorite artichoke heart dip recipes ? I'm thinking of adding scallions and roasted red bell peppers?

    hot artichoke heart dip

    This is an extremely quick,easy and delicious appetizer,dip or spread.

    Ingredients

    1/2 cup Parmesian Cheese

    1/2 cup Mayonaise

    4-5 garlic cloves

    1 can artichoke hearts

    Preparation

    Drain and chop artichoke hearts

    chop garlic cloves

    Mix all ingridients well and bake uncovered in oven safe dish-bowl at 350 degrees approximately 20 mins or till top is golden brown.

    Serve hot with crackers or bread or use to top baked potatos---use your imagination, you can't go wrong with this one.

    Hot Crab and Artichoke Dip

    Ingredients Serves 8 servings

    9 ozs artichoke hearts (frozen)

    1 red bell pepper (finely chopped)

    3 tbsps unsalted butter (margarine)

    2 tbsps all-purpose flour

    11/4 cups half-and-half (reduced fat version)

    3 scallions (thinly sliced)

    2 ozs grated parmesan cheese (finely grated parmesan cheese 12 cup)

    11/2 tsps fresh lemon juice

    11/2 tbsps jalapeno (minced drained pickled, chiles optional)

    1/2 tsp salt

    1/4 tsp celery salt

    3/4 lb crabmeat (lump, picked)

    slice pita bread (tortilla chips or baguette)

    1 Preheat oven to 375°F.

    2 Cook artichoke hearts according to package instructions, then drain well and finely chop. Cook bell pepper in 1 tablespoon butter in a small heavy saucepan over moderately low heat, stirring occasionally, until softened, about 5 minutes. Stir in artichokes and transfer mixture to a bowl.

    3 Melt remaining 2 tablespoons butter in saucepan over moderately low heat, then add flour and cook roux, stirring, 3 minutes. Add half-and-half in a stream, whisking, and bring to a boil, whisking.

    4 Reduce heat and simmer, whisking, 3 minutes.

    5 Remove from heat and stir in artichoke mixture, scallions, 1/3 cup parmesan, lemon juice, jalapenos, salt, and celery salt. Gently stir in crab. Transfer to a buttered 1 1/2-quart shallow baking dish and sprinkle with remaining parmesan.

    6 Bake dip in on baking sheet until bubbling, 20 to 25 minutes. Serve warm.

    7 Note, dip can be prepared (unbaked) one day ahead and kept covered and chilled.

    I keep my hot artichoke dip recipe fairly simple, but get raves:

    2 cans quartered artichokes, drained and chopped

    2 jars marinated artichoke hearts, drained and chopped

    1 cup lump crab meat, chopped (optional)

    1 tsp. Hot sauce

    1/4 tsp garlic powder

    2 cups shredded Parmesan

    1 cup whole egg mayonnaise

    Mix together and place in baking dish. Bake at 375 degrees for 45 minutes or until bubbling and slightly browned. Serve with blue corn tortilla chips.

    mine is similar to Jenny Ps..but i add cream cheese and spinach also :)
