What goes good with Sliced Tomatoes?

I want to make a dinner with Sliced Tomatoes and/or Sliced Tomatoes and Cucumbers as my side. My mind went blank on what to have with it. I was thinking about pork chops. But I am craving some Tomatoes and Cucumbers.

I love a tomato-cucumber salad with feta, Spanish onion, cilantro and a bit of cumin and olive oil. Add garlic if you like. This is a very common Middle Eastern / Mediterranean dish. It goes well with just about anything in my opinion.

If you want to do the whole Mediterranean thing, consider making Kefta. They're just little meatball type things (depending on what shape you choose) that you can bake, pan-fry or grill. Just google Kefta and you will find a ton of recipes. Any combo of ground meat works but beef and/or lamb is most common. They're super easy and if you're in a food rut, it will seem like something new without needing any extra skills or special ingredients.

You can make a great side dish called a veggie plate, with sliced tomatoes, sliced cucumbers, celery sticks, carrot sticks, sliced green bell peppers, sliced radishes, broccoli florets, cauliflower florets, even sliced raw zucchini. Add a dish of Hidden Valley Ranch Dressing alongside your plate of veggies as a dip. This could go well with a hamburger (or just hamburger patty if you want to go low carb for your paleo diet friends). If you have a diabetic in your group, they will love you for providing a low-carb meal like this.

Hi Lavada! That’s indeed a pretty healthy option and I do encourage you to have tomatoes and cucumber more often. However, since you are having it as a side, you can basically have anything consistent enough with it. Pork chops wouldn’t be bad at all, but you can also opt for chicken, lamb or any other source of protein.

Anything you like. I used to go to a friend's house as a kid for dinner, and her mother always had a big plate of sliced tomatoes on the table. Sometimes I make a plate of sliced cucumbers as a side for my bf, because he loves them. If you like, have some dressing with it for dipping.

Tomato and cucumber sandwiches with mayo and some salt and pepper are amazing.

Or you can have a cold pasta salad with cucumber and tomato, just cook your noodles and rinse them in cold water for a minute and mix with your choice of salad dressing or olive oil. You could even make tuna melts with a slice of tomato on top.

Almost anything goes with this. I make a tomato salad with cucumbers and black olives with my home made dressing and sometimes add mozzarella.

Make my dressing: 2 tablespoons wine vinegar, 1 teaspoon sugar, salt and pepper to your taste, a pinch of Italian herbs (rub these between your fingers to bring out the flavor before adding) and stir or shake until sugar is dissolved. Add 2 tablespoons of olive oil and stir or shake again.

There is no one single Paleo Diet, as our ancestors from all over the world ate dramatically different diets depending on the climate where they lived, their landscape, accessibility to water bodies, and the latitude that they lived. This is a detailed meal plan for the paleo diet https://tr.im/Kg5nO

In some cases, a Paleo Diet may be 90% plant foods and 10% animal foods, and in other cases, a Paleo Diet may be 90% animal foods and 10% plant foods.

For example, our ancestors that lived near the equator had year long access to more plant materials such as root vegetables and various fruits, veggies, and nuts.

On the other hand, our ancestors that lived at higher latitudes further away from the equator only had access to fruits and vegetables seasonally at one specific time period per year, and had larger periods of the year where they ate a higher % of meats, organ meats, fish, and other animal-based foods, or fermented foods that could be stored for winter.

Sliced tomatoes and cucumbers would be a good garnish for almost anything. I especially think it would be great over a pasta dish or a skillet dish, or almost anything braised.
