How long are leftover Harvard beets (cooked with vinegar and sugar) safe to eat if refrigerated?
I prepared these five days ago and the leftovers have been in the fridge since. Are they still ok?

you'll be ok if you reheat then again and do'nt finish toss the rest

OMG I haven't had Harvard beets since I lived at home! Mom used to make them all the time, we loved them as kids. I just never thought of trying to make my own. Anyway, to answer your question, yes they should be fine. If they were bad, you'd know it, they would be green. :)

They should be good for a long time if you keep them in a sealer jar.
That is the way I make my pickled beets and I keep them for several months in preserving jars.
