I need some yummy cucumber recipes!?

A co-worker of my husband gave us a large bag of home-grown cucumbers. We adore cucumbers but I am looking for some new recipes to try with them. We have already done the pickle thing, so I am looking for something a bit different. Anybody have any ideas?? Thanks. :)

    Here's a wonderfully rich, moist and delicious cake that no one will believe is made with cucumber.......

    4 large eggs

    1 cup canola oil

    2 cups self-rising flour

    2 tsps. baking powder

    2 tsps. baking soda

    1 tsps. vanilla

    2 tsps. cinnamon

    2 cups sugar

    1/2 cup chopped walnuts

    1/2 raisins

    1/2 cup crushed pineapple (drained well)

    3 cups grated cucumber

    Grease a 13 x 9 pan with crisco, do not flour

    Mix eggs, oil, walnuts, raisins, vanilla, pineapple and cucumber together in bowl.

    In seperate bowl mix flour, baking powder, baking soda, cinnamon and sugar.

    Combine dry ingredients with liquid until well mixed. Spread evenly in baking pan.

    Bake at 300 degrees for 45-60 minutes or until nicely browned on top.

    Dust confectioner's sugar on cooled cake or slice and add cool whip.

    Can be served warm or cold.

    *grated zucchini or grated carrot may be substituted for the cucumber.

    Cucumbers Vinaigrette

    3 cucumbers, peeled halved and thinly sliced

    1/2 c red onion, thinly sliced

    1 Tbsp chopped basil

    1 Tbsp chopped parsley

    2 Tbsp red wine vinegar

    1 Tbsp olive oil

    2 1/2 tsp dijon mustard

    1/4 tsp salt

    1) Pour vinegar, oil, mustard & salt into a jar. Shake until emulsified.

    2) Combine cukes, onion & herbs in a bowl.

    Cucumber Sandwiches

    Ingredients

    1 carton (8 ounces) spreadable cream cheese

    2 teaspoons ranch salad dressing mix

    12 slices pumpernickel rye bread

    2 to 3 medium cucumbers

    Directions

    In a large bowl, combine cream cheese and dressing mix. Spread on one side of each slice of bread. Peel cucumbers if desired; thinly slice and place on six slices of bread. Top with remaining bread. Serve immediately. Yield: 6 servings.

    Deep fried cucumbers, or use zucchini or yellow squash.

    Ingredients:

    4 cucumbers, peeled and thinly sliced

    salt and pepper

    2 eggs, well beaten

    1 cup fine dry bread crumbs

    1/4 cup bacon drippings

    Preparation:

    Season cucumbers with salt and pepper. Dip slices first in egg and then in bread crumbs. Fry in hot bacon drippings. Brown on both sides, drain, and serve hot.

    Tangy Cucumber Gelatin

    Ingredients

    1 package (3 ounces) lemon gelatin

    1/2 cup boiling water

    1 medium cucumber, peeled and diced

    4 green onions, chopped

    1 cup (8 ounces) 4% cottage cheese

    1/2 cup mayonnaise

    Directions

    In a bowl, dissolve gelatin in boiling water. Add the cucumber and onions. Stir in cottage cheese and mayonnaise until blended. Pour into two 1-1/2-cup molds coated with cooking spray. Refrigerate overnight or until set. Unmold just before serving. Yield: 2 servings.

    I keep cucumber spears in the frig for snacking. I love to dip them in a basil mayonnaise dressing.

    My favorite summer cucumber dish is cold cucumber soup. You can not imagine how refreshing this is and it makes a beautiful first course for a nice dinner.

    6 lbs cucumbers peeled, seeded and chopped

    3 cups butter milk

    3 cups heavy cream

    1 tbsp lemon zest

    1 tsp lemon juice

    1/4 cup chopped fresh mint

    4 chives or green onions chopped.

    Toss all ingredients in a large glass bowl

    Using a blender process until smooth - you will probably have to do batches.

    Return the processed mixture to a large glass bowl

    Stir

    Season to taste with sea salt and fresh ground pepper to taste

    Cover tightly with plastic wrap

    Refrigerate for at least 2 hours or over night

    Stir and adjust seasoning if needed

    Serve in chilled soup bowls

    Garnish with a dollop of sour cream, very thin cucumber slice, and a sprig of fresh mint.

    This is so delicious and so impressive that you may want to invite friends over for dinner just to show it off.

    I KNOW it has tons of calories and fat but so what - you need to treat yourself occasionally.

    Cucumber, Tomato, & Basil Salad for 6

    3 tablespoons extra virgin olive oil

    3 tablespoons cider vinegar

    1 tablespoon chopped fresh basil OR 3 tablespoons prepared pesto

    Mrs. Dash Original Seasoning OR salt and black pepper, to taste

    1 cup cooked long grain & wild rice

    2 cups fresh diced tomato

    1 cup thinly sliced red bell pepper

    1 cucumber, cut in half lengthwise and sliced

    1 onion, quartered and sliced

    1 cup cubed mozzarella cheese, optional

    2 cups toasted and cubed bread OR croutons

    In a large bowl combine olive oil, vinegar, basil, salt and black pepper; whisk to combine.

    Add diced tomatoes, rice, cucumber, onion, and bread. Toss together with the dressing and chill until ready to serve.

    There used to be a Cattle Company steakhouse in Indianapolis that served fried cucumbers as an appetizer. They were sliced about 1/2 inch thick, probably dipped in egg, breaded, deep fried, and served along with a little bowl of horseradish sauce. I loved them!

    I love to make the Middle Eastern side dish, Tabbouleh. Its simple and nice and light.

    1\2 C bulgar wheat

    2 C chopped fresh parsley

    1\2 C chopped fresh mint

    2 tomatoes, chopped

    2 CUCUMBERS, peeled, seeded, chopped

    1 scallion, finely chopped

    2 Tbsp xtra virgin olive oil

    2 Tbsp fresh lemon juice

    Pour 1 C boiling water over bulgar with 1\4 tsp salt. Cover. Let stand 30 mins. Drain to remove excess liquid. Toss with remaining ingredients. Add salt n pepper to taste.

    You could try a tzatziki sauce. Used as a condiment for gyros it's a great accompaniment to grilled meats.

    8 ounce container plain yogurt

    2 cucumbers - peeled, seeded and diced

    salt and pepper to taste

    1 tablespoon chopped fresh dill or 1-1/2 teaspoon dry

    3 cloves garlic, peeled and minced

    2 tablespoons of mint

    mix ingredients and let sit for 1 hour before using to let the flavors blend.

    Cucumber dip for bread:

    Remove all or part of the skin from one cucumber.

    You don't have to remove seeds.

    Shred it with a standard grater (use the bigger holes, not the tiny holes).

    Beat with 2 (8oz) blocks of cream cheese.

    No salt or seasoning is needed.

    Hollow out a pumpernickel round loaf, fill with dip,

    serve french, pumpernickel, sourdough, rye bread cubes to dip in.

    This is a great recipes, even people who won't eat vegetables will eat this.

    Also, Gazpacho...can't go wrong with that.

    (the cucumber soup with buttermilk....sounds wonderful (last post)...I'll be sure to try it.)

    Make a salad:

    Two Parts, cucumbers, peel & seed, slice into 1/4 inch - 1/2 inch slices

    Two parts, tomatoes, seed and dice into 1/2 inch pieces

    One Part, green onion

    One part, Feta cheese

    1/2 part minced red onion

    1/2 part Kalamata olives

    Toss with Italian vinaigrette

    Also good with 1 can white beans (Cannelloni) drained and rinsed

    I make a cucumber salad:

    Thinly sliced cucumbers

    sliced up green onions

    Julienne cut green, red, yellow and orange sweet peppers

    small amount of minced fresh garlic

    Miracle Whip

    1 TBSP Dijon mustard

    Pepper to taste

    Mrs. Dash to taste

    I don't have a measurement on much because I just make it to taste and by eye every time. Don't use TOO much Miracle Whip (it tastes better than Mayo), the cucumbers will release juice to thin the dressing down. Depending on how much you use in the way of veggies will determine how much dressing you use.

    It's one of my fave salads.

    I like to slice them up and have them on whole wheat crackers with a bit of tuna fish on top. It's very tasty.

    I also like to just wash and slice cucumbers, salt them lightly then eat them like potato chips. They're also really good with sour cream and onion, ranch or blue cheese dip.

    Fennel Cucumber Salsa

    Ingredients

    1 English cucumber, diced

    1 large fennel bulb, diced

    1 avocado - peeled, pitted, and diced

    1/2 red onion, chopped

    1/2 cup pickled banana peppers, diced

    1 bunch cilantro, chopped

    2 tablespoons honey

    3 tablespoons fresh lemon juice

    salt and pepper to taste

    Directions

    Combine the cucumber, fennel, avocado, red onion, banana peppers, cilantro, honey, lemon juice, salt, and pepper in a bowl. Allow mixture to sit 20 minutes before serving.

    Cucumber Salad

    Ingredients

    1/2 cup reduced-fat sour cream (such as Daisy®)

    2 tablespoons fresh lemon juice

    2 tablespoons chopped fresh dill

    3 cucumbers, halved lengthwise and thinly sliced crosswise

    1/2 cup thinly sliced red onion

    coarse salt and ground black pepper to taste

    Directions

    Mix sour cream, lemon juice, and dill together in a bowl. Add cucumbers and onion; stir to combine. Season with salt and black pepper.

    Cucumber Soup

    Ingredients

    2 cucumbers

    2 tablespoons thinly sliced green onion

    2 tablespoons margarine

    1 tablespoon red wine vinegar

    4 cups chicken broth

    1 tablespoon farina

    salt to taste

    1/8 tablespoon dried tarragon

    1/2 cup sour cream

    3 tablespoons chopped fresh parsley

    Directions

    Peel, seed, and chop 2 cucumbers.

    Cook the chopped scallions in the margarine until soft. Add the chopped cucumbers and the wine vinegar. Pour in the broth, and stir in the farina. Salt to taste, and add tarragon. Let the soup simmer for 20 minutes, or until the cucumbers are soft.

    Put the soup into a blender, and puree it.

    Pour the puree into a bowl, and whisk in the sour cream. Taste the soup for seasoning. Pour the soup into bowls, and garnish with cucumber slices and chopped parsley.

    Jalapeno Cucumber Lemonade

    Ingredients

    3 fluid ounces vodka

    2 fluid ounces jalapeno-infused simple syrup (see footnote for recipe)

    2 fluid ounces lemon juice

    5 fluid ounces cucumber water (see footnote for recipe)

    1 small spear of cucumber

    Directions

    Mix vodka, jalapeno-infused simple syrup, lemon juice, and cucumber water in a cocktail shaker and pour over ice in an highball glass. Garnish cocktail with cucumber spear.

    Fish with Cucumber-Orange Relish

    Ingredients

    1 (11 ounce) can mandarin oranges, drained

    1 medium cucumber, seeded and chopped

    1 green onion, thinly sliced

    1/4 cup cider vinegar

    1 teaspoon minced fresh dill

    1/4 teaspoon salt

    1/4 teaspoon pepper

    4 (4 ounce) orange roughy fillets

    Directions

    For relish, in a small bowl, combine the first five ingredients; set aside. Combine salt and pepper; sprinkle over fillets. Place on a broiler pan coated with nonstick cooking spray. Broil 3-4 in. from the heat for 9-12 minutes or until fish flakes easily with a fork. Use a slotted spoon to serve relish with the fish.
