Have you considered turning them into fishcakes? add any cooked, flaked fish to the mix and shallow-fry. very nice.
good with ratatouille (don't panic), chopped courgette/aubergine/peppers in a tom sauce with a few herbs, simple stuff, very tasty, the sauce works well with the starchiness of the fishcakes.

Potato pancakes make the BEST grilled Cheese sammys EVER. Just slap a couple of slices of cheese between the warm cakes and the residual heat from the cooking should melt it. If not stck it in the microwave. My 4 1/2 yr old like these better than grill cheese made with bread.
Serve those suckers with a salad or chips and you're in like flin.

When you make your potato cakes encase a prawn and serve with garlic prawns, battered fish and chips. all foods you can sit down with in front of the TV and use your fingers.
I love those kinds of meals, and the prawn inside the potato pattie will come as a surprise.

Easy.. make a Potato and cheese pie.Just add enough cheese to taste and mix up , season and put in the oven in a dish until hot and then add a little more grated cheese and under the grill until brown.
A little cooked onion added will give another flavour.
Cheap and Nutritious.

Pork chops or baked chicken would go great with potato cakes. What about make them for breakfast/brunch and serve with eggs, bacon or sausage and fresh fruit. I always make mine for breakfast even if they have garlic in them.

potatoes are not bad for you if you eat them in moderation. two days in a row is not excessive gari. learn the facts.
you could make many things with them.. do you like salmon? i watch a lot of food network and love ina garten.. this is one of her recipes you might like.. i tried it once before and it's yummy

or if you dont like that, maybe some roasted chicken? that's not hard at all to do.. just get a whole chicken. rub a little butter under the skin, and season the outside with whatever spices you want. both would be good with your potatoes.

The potato cakes would be a great side dish for any dish you normally serve with potatoes...even ones with gravy.
